This bruschetta toast recipe, weirdly enough, is from a YA novel I read recently. It was a terrible book and not worth the time, but one of the characters made this dish and it was described with such detail I had to give it a try! This was my day-off lunch that I cooked special and ate out on my little balcony.
Ingredients: A loaf of ciabatta (or a baguette) Fresh tomato Roasted red peppers Sea salt Olive oil Butter Clove of garlic, peeled and crushed
Melt some butter in a frying pan. Slice some bread. Crush the garlic and rub both sides of each slice with it. Lay the bread in the frying pan to toast (don't forget to flip it!). While it's toasting, dice up your tomato and red peppers. When the bread is toasted golden, transfer to a plate and pile your peppers and tomatoes on top. Give the slices a little sprinkle of sea salt and a few drizzles of olive oil to finish.
Enjoy your treat! This makes an amazing appetizer for a party or a simple light lunch, and takes you right to the Mediterranean. I can't wait to try this with fresh tomatoes this summer!
